Thai Glazed half shell mussels

2kg half shell mussels
juice & zest of three limes
1 tbsp palm sugar or brown sugar
2 finely chopped chillies
2 tbsp fresh finely chopped coriander
2 tbsp fish sauce
2 cloves finely chopped garlic
2 tbsp finely chopped ginger

Lay frozen mussels out onto tray and cover with aluminum foil.

Oven bake at 350°F for 10 minutes. Combine all ingredients and spoon onto mussels. Broil for 2-3 minutes on high until golden.

Serves 4-6
